Ingredients
  

  • 2 large boneless skinless chicken breasts (or 4 small)
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

For the Potatoes:

  • 1.5 lbs baby potatoes halved
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

For Garnish:

  • 2 tbsp chopped fresh parsley
  • Lemon wedges optional

Instructions
 

Preheat & Prepare:

  • Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.

Season the Potatoes:

  • In a bowl, toss the potatoes with olive oil, garlic, oregano, thyme, salt, and black pepper. Spread them evenly on one side of the baking sheet.

Season the Chicken:

  • In the same bowl, coat the chicken breasts with olive oil, garlic, smoked paprika, oregano, thyme, salt, and black pepper.
  • Place the chicken on the other side of the baking sheet.

Add Parmesan & Bake:

  • Sprinkle Parmesan cheese over both the chicken and potatoes.
  • Bake for 25 minutes, then flip the chicken and stir the potatoes.

Finish Cooking & Serve:

  • Continue baking for another 10–15 minutes, or until the chicken reaches 165°F (75°C) internally and the potatoes are golden.
  • Sprinkle with fresh parsley and serve with lemon wedges if desired.

Notes

  • For extra crispy potatoes, broil for 2–3 minutes at the end of baking.
  • Swap chicken breasts for thighs for a juicier result.
  • Add extra veggies like broccoli or bell peppers for a complete meal.
  • Store leftovers in an airtight container for up to 4 days.
